Black Bean Salsa Dip
16 oz can black beans, 10 oz frozen corn, thawed
rinsed, drained 1/2 c red pepper, chopped
1/3 c red onion, chopped 2 lg firm tomatoes, chopped
Red pepper flakes OR Good Seasons Italian Dressing
Tobasco sauce mix, prepared
1/2 c green pepper, chopped 1/2 c celery (optional)
Mix all ingredients till well blended. Use just enough prepared
dressing to moisten, or coat vegetables, or to your own taste. Use just a small
amount of hot sauce or red pepper flakes. It will "bloom out" and become warmer,
after soaking in the wet mix. You can always add more later, if it isn't hot enough,
or let each person season their own salsa with extra Tobasco, so that other people
won't have to pass it up, because it is too hot! Other vegetables can be added, or
some left out, as you wish.
Gunslinger Black Bean Soup (from Sugar Busters)
4 oz ham, chopped 19 oz can black bean soup
1 T chili powder 1 med onion, chopped
15 oz can black beans, 14 oz can chicken broth (or use
rinsed & drained instant to make equal amt)
2 garlic cloves, crushed, chopped green onions to top soup
minced (or dry equivalent) salt & pepper to taste
Brown ham 5 min in 2 qt pan, med hi. Add beans, soup, broth, seasonings,
onion & garlic. Bring to boil, then simmer till onions are tender, about 5 min. Salt
& pepper in bowls and garnish w/ green onions. Serves 4 - 6. (Can substitute 2 c
of dry black beans, cooked as directed on pkg.)
Broccoli Cheese Rice
1 1/2 c water 1 1/2 c instant rice
2 inch slice of Velveeta 1 med onion, chopped
1 lg raw broccoli
Bring water, broccoli and onion to boil over med heat in lg saucepan. When it
starts to turn bright green, add chunks of cheese. Stir till melted. (Continue to
boil.) Add rice. Stir well. Cover. Remove from heat. Wait 5 mins. Serve.
Sally's Tater Tot Casserole
2 lb bag frozen tater tots 1 can cream of mushroom soup
1 can cream of celery soup 1 lb hamburger
1 med onion, chopped 2 c shred cheddar cheese
8 oz sour cream
Brown meat and onion. Drain off fat. Stir in all other ingredients. Spray lasagna
pan w/ Pam. Bake at 350 degrees for 30-40 mins. Sprinkle top with cheese, if
desired. Tater tots should be "toasty."
About 2 sm baked chickens 2 lg stalks celery, chopped
6 heaping forks full of sweet 1/2 c onion, chopped
pickle relish 5 heaping T's of mayonnaise
Remove all bones and pull chicken into pcs. Stir all ingredients together. Use
enough mayo to moisten. Sprinkle w/ pepper.

Hominy & Eggs
Shown in the picture above. This a favorite one-skillet meal. The whole family
loves it, from toddlers to great-grandmas! Perfect quick & easy camping breakfast.
We love it like this, but you can always sprinkle with some mild or medium cheddar
cheese for your cheese lovers. Nobody who tastes it ever says "no." Hominy is
1 15 oz. can of hominy, drained. (Yellow or white.)
5 eggs (one more or less won't hurt)
2 Tbsp. butter or margarine
Heat a 10" skillet over medium high heat. Open the can of hominy, but keep the lid
in place long enough to drain the liquid. Melt the butter in the skillet and tilt the pan
to coat the bottom. Add the hominy to the skillet and let it cook, stirring
occasionally, till it is hot and has lost that wet look. You don't want watery eggs!
While it is cooking, break the eggs into the hominy can and stir them well, with a
fork. (This saves dirtying a dish!) When the hominy is hot, but not browned, add
the eggs and stir them gently, lifting from the bottom, as you would scramble eggs.
If you have to have cheese with your eggs, add about 1 cup of shredded cheese as
soon as your eggs are as done as you like them. Stir just to melt the cheese and
remove from heat. Serve immediately. Salt and pepper to taste. Since hominy is a
starchy vegetable, add oranges and milk and you have four food groups!
